Johor Bahru Buy: Ten Fingers Bakery (一双手 Ten Fingers) Shanghai Mooncakes

Ten Fingers Bakery, a.k.a. “一双手 Ten Fingers” meaning “a pair of hands (with) ten fingers”, is a popular bakery-cafe specialising in artisanal, handcrafted baked goods and festive treats made with fresh, quality ingredients. Established since 2017, the bakery is well-known for their handmade Shanghai mooncakes and introduced their handmade Chinese New Year pastries in 2023, including their signature pineapple balls.

Ten Fingers Bakery is based in Johor Bahru and has a little cafe / main workshop near Paradigm Mall, offering coffee and cakes and serving as one of their self-collection points for cakes and pastries ordered online.

During annual Mid-Autumn Festivals or other festive seasons, Ten Fingers’s pop-up kiosks will appear in various shopping malls in Johor Bahru and Kuala Lumpur — don’t miss them or find their locations via their Facebook.

Ten Fingers offer 10 different flavours of small-size Shanghai mooncakes (烤月酥) — including two new flavours (in 2026). In addition to 2 Original Lotus (white / pandan) and 2 Cheese Lotus (white / pandan) flavours, there are four with various tea flavours and two specials: Black Sesame Nuts and Nori Seaweed. All flavours have either salted egg yolks or yolk-less.

A Nanyang invention, the Shanghai mooncakes feature crumbly, rich, butter-cookie shortcrust instead of the thin, chewy, golden baked skin of traditional (Cantonese-style) mooncakes.

For my first box of the seasonal baked Shanghai mooncakes, I chose 6 special, creative flavours, all with salted egg yolks — coincidentally, it is called “M5 风味非主流 The Alt Flavour Collection” on their website — and 4 of them are infused with fragrant tea flavours.

From top-left to bottom-right:

  1. The Japanese Houjicha (日式焙茶) mooncake is brownish with almond nibs topping. The mild-sweet mung bean paste is infused with smooth houjicha flavour, with salted egg yolk contributing its savoury flavour, and melon seeds giving some crunchiness.
  2. The Black Sesame Nuts (黑芝麻坚果) mooncake is black and topped with white sesame seeds. It has nutty lotus paste filling wrapped in black sesame-infused crust. This is probably the crunchiest mooncake with addition of black sesame flavour as well as flavours of the mixed nuts, including melon seeds.
  3. The Nori Seaweed / Cashew (海苔腰果) mooncake is yellowish with seaweed flakes topping. It is more savoury than sweet with a distinct seaweed flavour and salted egg flavour. The addition of crushed cashew nuts in the mung bean paste filling, with melon seeds, add extra crunchiness.
  4. The Matcha Jasmine (抹茶茉莉) mooncake is dark greenish and topped with white sesame seeds as well. The dual flavours of mild-bitter matcha and fragrant jasmine roils in the mouth with crunchy melon seeds.
  5. The Yuzu Green Tea (柚香绿茶) mooncake is yellow in colour and topped with pumpkin seeds. It has a bright yuzu (Japanese citron) and green tea flavours in the green tea-infused mung bean paste filling.
  6. The Oolong Osmanthus (乌龙花田) mooncake is greyish and topped with dried osmanthus flower. The flavour of oolong tea leave is distinct with subtle osmanthus flavour.

Also, the salted egg yolks in the mooncakes add mellow savouriness to the pastries without its strong flavours, allowing the intended fragrance and flavours of each mooncake to be more prominent. At the same time, the mild savouriness of salted egg reduces the bitterness of all tea flavours (houjicha, matcha, green tea and oolong).

After trying the special flavours, I went back for the remaining mooncakes with classic flavours (including the cheesy variations) and the two new-launched (again) to make up 6 pieces in a box. However, I opted for all mooncakes to be without salted egg yolks this time.

From top-left to bottom-right:

  1. The Original White Lotus (原味莲蓉) mooncake has black sesame seeds as topping. It has the familiar, classic lotus paste flavour, with crunchy melon seeds, and the mild-savoury, butter flavour in the shortcrust is more distinct.
  2. The Original Pandan (原味翡翠) mooncake has white sesame seeds as topping. Consider it as the Original White Lotus mooncake with pandan-infused lotus paste filling giving the additional pandan flavour.
  3. The Cheese White Lotus (芝士莲蓉) mooncake is topped with black sesame seeds and melted shredded cheese. The shortcrust is infused with cheese creating an interesting flavour of savoury butter and cheese with sweet lotus paste — common ingredients but unique taste.
  4. Similarly, the Cheese Pandan (芝士翡翠) mooncake, topped with white sesame seeds and shredded cheese, has a combined flavour of sweet lotus paste and savoury butter and cheese, and with pandan flavour this time.
  5. The Matcha Jasmine (抹茶茉莉) mooncake has a more distinct flavour of matcha and jasmine with slightly higher matcha-bitterness without salted egg yolk.
  6. The Nori Seaweed / Cashew (海苔腰果) mooncake without salted egg yolk has a more distinct savoury crust with seaweed flavour, and a subtle hint of buttery flavour, and more crushed cashew nuts in the filling to increase the crunchiness.

Without salted egg yolks, the original flavours of the mooncakes are much more prominent and easier to pick up. With salted egg yolks to add a slight savoury note, the flavours are more complex. Take your pick!
