Scissors Cut Beef Noodle (剪刀剪牛肉面) is a popular Chinese-Fujian restaurant famous for serving Fujian-style specialty dishes since 2013, especially its signature beef noodles and beef hotpot where tender beef cuts are trimmed using scissors rather than a knife. The restaurant is located in Taman Maju Jaya, not far from Plaza Pelangi.

There are a series of customisable options for their signature beef noodles, diners can pick one or more braised beef ingredients (beef, cow’s stomach / tripe, tendon and/or beef meatball) to go with soup / dry noodle, rice, dumplings or as a dish. For soup noodles, aside from original traditional broth, there are variations like Fuzhou muff cabbage (糟菜 or mustard greens preserved in fermented red yeast wine lees), mala (麻辣), spicy (香辣), pickled pepper (泡椒), sour-and-spicy (酸辣) and special series where muff cabbage is mixed with the other flavours.
There are pork and lamb noodles as well with similar flavours and a long list of Chinese-Fujian cooked dishes, vegetable dishes, soups, etc. Advance bookings are required for their exclusive Herbal / Hotpot Beer Duck and Fujian Stewed Ginger Duck dishes.

The original Braised Beef Mixed Noodle (红烧三宝面) — with Fuzhou noodle — has cuts of beef brisket, tripe and tendon in a bowl of beef broth that is slow-cooked for over 10 hours using cow bones, premium ingredients, and fresh vegetables and fruits. The rich, flavourful broth, enhanced with coriander, is sweet-savoury and non-spicy despite the reddish appearance. The beef cuts are soft, tender with crunchy tripe and the tendons are in a perfect state that is not too soft and with a slight crunchy, chewy texture. This beef noodle is superb!
