Pontian Eat: Kuey Tiau Leng / Ah Leng Fried Kuey Tiau (笨珍古早味亞龙黑面) @ Pontian Kechil

Kuey Tiau Leng, or Ah Leng Fried Kuey Tiau (笨珍古早味亞龙黑面), is an iconic food stall in Medan Selera Jalan Pengangkutan, a food court in Kampung Atap, famous for its fried kway teow, also known as “black noodle” (黑面). The stall also offers fried noodle and various ingredients (sausage, fishcake, etc) as faster options for those who prefer not to queue and wait for the signature “black noodle”.

On the wall outside the stall, a mural portrayed Senior Leng (Ah Leng) frying a wok of black noodles over big fire, and detailing the ingredients he used. A dragon rides on the wisp of smoke from his cooking — “Leng” means “dragon” in Hokkien.

The Black Noodle is really dark in colour — I had to brighten up the photo quite a lot, otherwise it will be a pile of black on the beige-coloured plate. Broad-flat kway teow is used to stir-fry with lots of ingredients (shrimps, cockles, slices of Chinese sausage, egg, fishcake slices, crispy fried pork lard, bean sprouts) and dark soy sauce over high heat. The finished dish has a moist texture, wonderful wok aroma and a slightly sweet, savoury taste profile. It is delicious.
