Berempah Bros is a popular Singaporean hawker brand founded by Chef Derek, winner of MasterChef Singapore Season 2. The brand specialises in a modern, unique twist of the traditional Malaysian-style Ayam Goreng Berempah (spiced fried chicken) and serving it with fragrant coconut rice. Berempah Bros has several outlets in Singapore and one of them is located in the foodcourt of Beauty World Centre.
Aside from the signature ayam berempah (spiced chicken) to go with fragrant rice, Berempah Bros offers variations with fish, pork, and also unagi (eel) — the Beauty World outlet has an “Outlet Exclusive” option for duck confit. There are grilled meat (chicken, squid, atka mackerel and tiger prawns) and sides for adding-on to main dishes too.
Their ayam berempah is marinated overnight using a homemade spice mix consisting of 16 aromatics and spices. The chicken is then fried till crispy and topped with crunchy “typhoon shelter” (避风塘) crumbs. The finished dish is accompanied by fragrant coconut rice (infused with chicken fats and aromatics), sambal belachan, and homemade achar (spiced pickled vegetable) — this much is shared at the stall.
The Signature Ayam Berempah (Thigh) — breast meat available too — is served with deep-fried, spiced thigh meat, topped with crispy crumbs, on coconut rice and accompanied by achar, a lime and sambal chilli — I added a fried egg that comes with a deep-orange yolk. The chicken thigh is crispy outside, tender and juicy inside with smooth spice flavours, and not salty. The sambal chilli gives the dish some spicy kicks. It is indeed a flavourful dish.
Berempah Bros’s unique dish offers a new taste experience and made me eager to try the other variations.
