Tow Kwar Pop (豆干薄), established since 1965, is a hawker stall in Tiong Bahru Market, specialising in tow kwar pop (also known as tau pok / dried tofu puff / 豆干薄), a Singaporean snack, and unique rojak. The stall has been featured in Singapore Michelin Guide since 2023.

The stall’s menu comprises of options using different combinations of the ingredients they use. Their Signature Rojak is one dish with all ingredients in and Traditional Rojak with lesser ingredients and smaller portion. Other combinations using tow kwar pop and you tiao (fried dough fritter / 油条) are available too and with add-ons of any of the ingredients.

The Signature Rojak (招牌罗杂) comprises of a piece of crispy dried cod fish, two tow kwar pop (stuffed with cucumber and bean sprouts), fried dough fritter, more cuts of cucumber, pineapple, apple and mang guang (jicama / turnip) and finished off with turnip shreds, sweet shrimp-paste-made sauce and roasty minced peanuts. The charcoal-toasted tow kwar pop, dried cod fish and dough fritters have crispy textures with smoky aroma and the fresh salad (cucumber, pineapple, apple and mang guang) contributed their natural sweetness and crunchiness. And, the chilli paste has a special, unique flavour that adds more wows to the dish.
Unlike a typical rojak dish where all its ingredients are usually stirred and coated with thick, sweet shrimp-paste-made sauce, the Signature Rojak is dribbled with a small amount of the rojak sauce on the ingredients and served with two dipping saucers containing more of the same sweet sauce and chilli paste for adjusting the dish to taste. This dish has sweetness well under control and more of the smoky flavour and crispy, crunchy textures.

After trying the Signature Rojak dish at Tow Kwar Pop, try creating a custom dish of rojak to one’s preference by picking and adding the desired ingredients.
