Singapore Eat: Bing Fang Wanton Noodle (丙坊云吞面) @ Bukit Batok

Bing Fang Wanton Noodle (丙坊云吞面) offers a number of noodle dishes, including its signature wanton noodle, soups (wanton soup, dumpling soup) and side dishes (fried wanton, fried dumpling, chicken feet and fermented beancurd crispy pork). The noodle stall is located in Aces League 447 Coffee Shop below Block 447, next to The Kuihmaker, in Bukit Batok West.

Bing Fang’s signature Wanton Noodle (云吞面) is served with generous amount of char siew slices on egg noodle with pak choy, crispy fried pork lard and reasonable-sized wantons in a bowl of light-tasting soup. The thin noodle is dry-tossed in a dark delightful sauce and has crisp, springy texture. The slices of char siew are juicy-sweet and the savoury wantons, using fresh minced meat, are delicious. And the savoury soup has distinct flavours of white radish with light peppery taste. This dish is very well-done and delicious.

Nearly all of Bing Fang’s noodle dishes are served dry-style with thin egg noodles (default), pak choy and crispy fried pork lard. The noodle-tossing sauce may varies slightly depending on the dish ordered.

The Chicken Feet Noodle (鸡抓面) is served with big braised chicken feet and slices of mushrooms on the base egg noodle, which is tossed in the same braised sauce for braising the chicken feet. The collagen-rich chicken feet are so soft that even a toothless person can eat them. And the braised sauce has a smooth sweet-savoury flavour and not salty.

Top-left: The Dumpling Noodle (水饺面) is served with 3 big-size dumplings with shrimp and minced meat fillings in a separate bowl of soup from the base noodle. The shrimp-meat dumplings are savoury, not salty and enhanced with mild-peppery flavour from the soup.

Top-Right: The Fried Shrimp Paste Wing Noodle (虾酱鸡翅面) is added with 3 pieces of fried chicken wings that are flavoured with shrimp paste. The chicken wings, fried on order, are well-fried with hot, crispy skins, succulent meat and mellow flavour of shrimp paste.

Bottom-Left: The Shredded Chicken Noodle (鸡丝面) is served with large amount of shredded poached chicken — they really shredded the chicken into fine strands — and braised mushrooms on the base noodle. The chicken meat is dribbled with some fragrant oil before serving and is not bland. It is a simple dish and yet flavourful.

Bottom-Right: The Fermented Beancurd Crispy Pork Noodle (南乳炸肉面) is served with large amount of fried pork on egg noodle. The strips of pork belly meat are well-fried till crispy and yet still retained its tenderness with a hint of mild fermented beancurd flavour. My first time trying such a tasty dish and the quantity of fried meat astonished me.

Bing Fang’s braised Chicken Feet (鸡爪) is also available as an add-on item to any of the dishes or as a separate dish comprising of 5 pieces (cheaper). The soft, melt-in-the-mouth, collagen skin is too good not to have more.

Bing Fang’s noodle dishes are nice and delicious with generous quantity. I am about to complete the list of noodle dishes and thinking to try their dishes with other types of noodle but the thin egg noodle is really too good to be substituted.
