Restoran Kiang (十五楼亚坚) is better known to older-generation Johorians as “Fifteen-Floor” Kiang that used to sell its self-style noodle dishes below a fifteen-storey flat, which was built in the 1960s and later demolished in 2003. The owner of the restaurant then moved to Permas Jaya (百万镇) in Masai, a sub-district of Johor Bahru, to continue selling its homemade dry-style noodle, mee pok and kway teow soup.
The “restaurant” is typically coffeeshop-style with one main stall selling noodles. Beverages are served from the rear of the shop.

Restoran Kiang’s Dry-style Specialty Noodle (特制干面) uses its homemade mee pok as default when no preference for type of noodle is specified. The flat yellow noodle is tossed with some delightful sauce, optionally with chilli sauce, and added with slices of char siew (barbecue pork) and a separate bowl of soup with fishballs and fishcake slices. The soup is light-tasting, yet flavourful from the ingredients that are boiled in it. This is the cheapest and most basic noodle dish.

Other ingredients can be added to create a sumptuous meal, such as pig liver, lean pork slices, minced pork, fish maw, scallop, faux abalone slices (squid slices), etc — additional charges apply, of course. The soup is richer and more flavourful with more ingredients added, but saltiness level remains low.

The soupy Kway Teow Soup (粿条汤) uses slimmer, flat rice noodle and doesn’t come with slices of char siew but a range of similar ingredients may be added — I opted for the ultimate mix of ingredients. There are fishballs, pig liver, lean meat, minced meat, fish maw, fishcake slices, fish dumplings (鱼饺) and faux abalone slices — some ingredients may change over time though — and garnished with fried shallots and chopped spring onions. As usual, the soup is rich with flavours from the ingredients, yet not salty. Kway Teow Soup has always been one of my favourites.

Visit Restoran Kiang for a simple bowl of dry-tossed char siew noodle or kway teow soup with fresh ingredients. Add on more ingredients as desired.
