Singapore Eat: Chu Mao Long / Teochew Braised Delights (初茂隆潮州卤味) Meat Shop @ Bukit Batok

Located at the edge of a small market in Bukit Batok West Shopping Centre, beside Bukit Batok West Food Hub, is a meat shop that sells Teochew braised and roasted delights. It is simply known as “潮州卤味” — translated as “Teochew Braised Delights” — but, on closer look, it actually has a lesser-known name called “初茂隆” (translated as “Chu Mao Long” in Chinese). When mentioning the shop, it is still easier to reference it as the “Teochew Braised Delights shop in Bukit Batok market”.

The Teochew braised delights shop sells braised duck, roasted duck, roasted pork, char siew (barbecue pork), braised pork belly, braised pig’s trotter, salted white chicken, salted kampung chicken, etc, as displayed in their glass shelf. Teochew side dishes such as preserved mustard (香味梅菜), pig’s trotter jelly (猪脚冻) and daylily (金针菜) are available too.

Note that kampung chickens have deeper yellowish skins than normal “white” chickens and usually slightly smaller in size — however, the size can be larger closer to Chinese New Year. The poultry meats and pig’s trotter are in high demands during festive seasons.

For our reunion lunch for Chinese New Year 2026, we ordered a salted kampung chicken, a braised duck (in 2 large styrofoam boxes) and a braised pig’s trotter as the meat dishes to complement a steamboat feast. It was not our first time buying meats from the shop, just not so much in quantity during normal days.

The Salted Kampung Chicken has a savoury flavour, not too salty, and with firm, tender texture than normal white chicken. As expected, the chicken is much leaner and not much fats under the skin.

The Braised Duck has beautifully-braised skin, not oily and is meatier, tender and similarly not much fats. The meat is juicy with mellow sweet-savoury flavour and not salty — we use the accompanying braised sauce for dipping rather than pouring over the meat.

The Pig’s Trotter is well-braised with firm, bouncy skin and non-oily. The meat is tender and has similar nice braised flavour too.

Chu Mao Long’s Teochew braised and roasted delights and salted chickens / kampung chickens are great options to consider for festive seasons, especially when eating-out is difficult to arrange and much more expensive — pre-ordering is recommended.
