Quanzhou Eat: Old Quanzhou Mee Sua Soup (老泉州面线糊)

Old Quanzhou Mee Sua Soup (老泉州面线糊) serves traditional-taste delights, especially the local-popular mee sua soup as its key offering. The little eatery sits on the edge of Quanzhou Ancient City (泉州古城) near Wenling Meishi Street (温陵美食街 / Delicacy Street).

Old Quanzhou’s signature mee sua soup comes with choice of ingredients from a long list of 30 — there are no limits on the number of items to add but typically around 3 or 4. Aside from mee sua soup, there are main dishes of pig trotter rice set, curry chicken / fish slices / beef rice sets, and Hokkien-popular snacks, including rice dumpling, peanut soup, yam cake, fried dough, herbal egg, pastries, etc.

Hot mee sua soup is generally consumed as breakfast in Fujian and we did likewise, especially on a cold winter morning. We had three bowls of mee sua soup with different toppings, according to individual preferences, and added a fried dough and a steamed rice dumpling to share. Adding a fried dough is a common way to eat the mee sua soup with additional crispiness and savoury flavour — similar to eating bak kut teh and Guangdong porridge.

My bowl of Mee Sua Soup (面线糊) is quite a large soupy bowl of thin rice vermicelli and comprises of fresh pig blood (猪血), oysters and pig liver — mostly submerged by the lightly-starched, sticky soup. The rice vermicelli may appear thin, or lesser in quantity, but the amount of calories is equivalent to a serving of rice and there are dissolved rice starch in the savoury soup too. The garnishes of scallions, fried shallots (with shallot oil) and pepper powder added their mellow flavours to the noodle soup, making it a delightful dish for breakfast.

The dark-soy Rice Dumpling (肉粽) is soft and savoury with chunky, tender pork belly meat and aromatic mushroom. This is a nice accompaniment to the mee sua soup.
