Day Night Herbal Soup (日夜养身汤), established since 1991, offers a wide range of herbal soups. There are soups for general maintenance, for nourishment, for improving complexion and also for relieving heatiness. A list of pork / chicken dishes are available to go with any soup, including Taiwanese braised pork / pork knuckle rice. The brand has several outlets around Singapore and one of its newer outlets is opened in Bukit Batok West Hawker Centre.

All herbal soups can be paired with white rice, brown rice or pumpkin rice. The pumpkin rice (金瓜饭), added with soft pumpkin flesh and shreds of black mushroom, has mellow sweet pumpkin flavour and is a more flavourful and nutritious option over plain rice. Brown rice will have more dietary fibre.
The Duck with Salted Vegetable Soup (咸菜鸭汤) — for improving appetite and relieving heatiness — is a bowl of hot, savoury soup after long hours of simmering duck meat with preserved vegetable, tomato and preserved plum (no salt needed). It contains rich flavours of preserved vegetable and duck meat, with tomato and plum as flavour enhancers, and just-nice saltiness level. The large pieces of preserved vegetable are simmered till very soft with the chunky, tender duck meat providing some bites. This non-herbal soup is suitable for general maintenance.

The Black Chicken Herbal Soup (黑鸡药材炖汤) — traditionally consumed as a restorative tonic to boost energy or qi, nourish the blood, and strengthen the immune system — is just what I need after recovering from a 12-day illness. The black chicken is boiled with many Chinese herbs and the ultra-tender meat falls off the bone easily. The real essence is in the herbal soup, of course, which is savoury with rich herbal taste but not bitter.

Although the herbal soups offer certain health benefits, they are not medicinal, and can be consumed anytime for general maintenance or simply as a healthier choice of soup to accompany any meals.
