Xiamen satay noodle (厦门沙嗲面 / 沙茶面) is a traditional specialty noodle dish that originates from Xiamen, Fujian, and heavily influenced by Southeast Asia’s culinary culture — overseas Chinese from Xiamen brought back satay sauce from Southeast Asia and adapted it to their local culinary customs. The essence of the dish lies in the rich satay broth, typically made by simmering satay sauce, peanut sauce, dried shrimp, etc, resulting in a savoury and slightly sweet-spicy flavour. The noodle dish is often served with a variety of toppings and is a representative dish of Xiamen.

We had a big bowl of Xiamen Satay Noodle (厦门沙嗲面) with toppings of big prawns, oysters and big beef balls — enough for 3 pax. The base noodle dish uses yellow noodle with bean sprouts submerged in satay broth. Both the prawns and oysters are very fresh and the beef balls have juicy beef flavour with firm, bouncy textures. The satay broth has nice, complex flavours and is savoury, sweet and mild-spicy — as expected — and not salty such that we can drink it without feeling thirsty.

Quanzhou’s vinegar pork (泉州醋肉) is a famous specialty snack in Minnan region of Fujian Province and originated in Quanzhou — a must-try since De Fa offers it. The pork tenderloin is marinated with vinegar, minced garlic, seasonings, and coated in sweet potato starch before deep-frying. Golden-brown in colour, the fried pork has crispy exterior and tender inside with an irresistible aroma. This crispy snack is delicious, and a great accompaniment to the satay noodle.
