Hong Heng Fried Sotong Prawn Mee (鸿兴炒苏东虾面) is a highly popular hawker stall located in the famous Tiong Bahru Market & Food Centre. The noodle stall is known for its affordable Fried Sotong Prawn Mee, which is Singapore-style Hokkien mee, featuring a rich, savoury prawn gravy. Hong Heng has been listed on the Singapore Michelin Guide since 2016.

The medium-size Fried Sotong Prawn Mee uses yellow noodle and thick rice vermicelli to stir-fry with shreds of sotong (squids), prawns, fishcake shreds, pork belly shreds, egg and accompanied by a lime and Hong Heng’s homemade sambal chilli. The dish has subtle wok aroma and looks dry on appearance but all the noodles and ingredients are fully coated with the smooth, savoury prawn gravy. The lime adds some citrusy flavour as always and the sambal chilli enhances the dish with more flavours than just spiciness — it is definitely a must to have and not too spicy anyway. The dish is really delicious.

I have eaten Hong Heng’s Fried Sotong Prawn Mee many times since it first appeared on Singapore Michelin Guide in 2016 — that’s nearly 10 years — and still like the taste. Do expect a long queue at Hong Heng during meal times, especially on Saturdays. And, the stall accepts cash only.
