Aside from its two sister outlets along Jalan Dhoby, near Tan Hiok Nee Heritage Walk, and in Taman Melodies, Palates & Bagels by The Awesome Mankind (T.A.M) opened its third outlet in AEON Mall Bukit Indah — officially on 28 December 2025. All of Palates & Bagels outlets feature different concepts and the Bukit Indah outlet has a Japanese-infused concept. However, big-size bagels with sweet and savoury flavours are the key signature offerings of all their cafes.
On the menu, there are several Japanese-style dishes as rice bowls and pastas — Ochazuke with salmon / cod fish are their signature offerings. As usual, savoury bagels with various stuffings are available but different from the Jalan Dhoby outlet. The meaty stuffings using whole duck leg, pulled lamb and beef brisket are very tempting. Several flavours of sweet-based bagels, mostly fruity series, are also available as ala carte items. There are yogurt bowls too.
One of their Signature Cold Drinks, the Brown Butter Coconut Latte has a foamy layer of brown butter (caramelised butter) with espresso sitting on iced coconut milk and topped with dried coconut flakes — there is no dairy milk. The latte has a rich coconut flavour with mellow sweet flavours of caramelised butter and is mildly sweet. The unique coffee is definitely nice to have.
The chef-recommended Spicy Butter Milk Chicken Bagel is served with a piece of fried chicken in spicy buttermilk, tamagoyaki egg, sliced cheddar cheese, tomato, cucumber and caramelised onion sandwiched between the selected bagel — I have Rosemary with Garlic Confit flavour. The spiced buttermilk is mild-spicy with flavours of spices and the fried chicken is thick, crispy and tender inside. The bagel contributed its mellow flavours too. This is delicious and pretty hearty — suitable for brunch.
The Earl Grey Latte with Salted Cream is another of their signature drinks, served with an instruction card that advises how to appreciate the latte. Made with espresso, special earl grey oat milk and sea salt cream, the latte carries a hint of savouriness in the white foamy layer on top of the iced coffee before stirring. Stir the drink slowly and taste the balanced flavours of coffee and earl grey with very subtle saltiness of sea salt. Another unique drink to please the palates.
The Unagi Bagel is another hearty meal — I tried it with black truffle bagel this time. Aside from the tasty and soft Japanese-style grilled unagi with pickled ginger, there are a piece of crispy hash brown, usual sides of tamagoyaki egg, sliced cheddar cheese, tomato, cucumber and with herb cream cheese. The dish is packed with lots of flavours from the ingredients — pleasant sweetness, savouriness and occasional kicks of acidity from the pickled ginger — and added with subtle truffle flavour from the bagel. Needless to say, delicious!
Since Palates & Bagels @ AEON Mall Bukit Indah has a Japanese-infused concept, I will try their Japanese-style dishes next.
By the way, their second outlet in Taman Melodies has a Thai-infused concept. That outlet was under construction when I walked past it some months ago and I will find a time to visit it for some Thai flavours.
