Singapore Eat: Taste The Kwang’s Black (老廣黑味道.炭烤黑叉烧) Charcoal-Grilled Black Char Siew @ Bukit Timah

Taste the Kwang’s Black / Charcoal-Grilled Black Char Siew (老廣黑味道.炭烤黑叉烧) is a popular Singaporean hawker brand famous for its Hong Kong-style charcoal-grilled char siew, which is roasted to a “black” caramelised exterior. The black char siew is often praised for its perfect fat-to-meat ratio and roasty flavour. The brand has a number of stalls across Singapore and one of them is opened in Bukit Timah Interim Hawker Centre.

The stall offers a number of delectable Hong Kong-style dishes — just looking at the menu is enough to salivate. Their signature black char siew can go with rice or with wanton noodle. Other dishes include roasted sausage rice, braised pork knuckle rice / noodle, chicken feet noodle / hor fun, etc, and also side dishes and add-ons.

The Char Siew Rice (叉烧饭) is served with the signature charcoal-grilled char siew, half a braised egg and greens on white rice and dribbled with a light, sweet-savoury sauce. The “black” barbecue pork is not grilled until “blackly” charred but carries a nice roasty / smoky aroma and very tender with well-balanced fat-lean ratio, and its wonderful flavour and sweet juiciness lingers in the mouth. It is indeed delicious. And, the small bowl of savoury soup is flavoured with miso, and not salty.

The Charcoal Char Siew Wanton Noodle (叉烧云吞面) is served with their delicious charcoal-grilled char siew with shrimp wantons and greens on thin, springy egg noodle tossed in a light sauce — I added a serving of braised chicken feet (2 pcs). The charcoal-grilled char siew is as delicious as before with that roasty flavour and sweet juiciness when chewed. The freshly-made shrimp wantons have soft skins wrapped around minced prawns. This dish is great too.

The well-braised chicken feet’s just-right sweet-savoury flavour does not tipped the wanton noodle dish into the strong-tasting range and a nice addition without adding much protein nor carbs. I will go for their chicken feet noodle another time.

The charcoal-grilled “black” char siew served by Taste the Kwang’s Black is delicious and I have taken a liking to it. But, I must still make myself try the other dishes.
