He Zhong Carrot Cake (合众菜头粿), located in Bukit Timah Interim Hawker Centre, has been around for over 50 years and serves only white-style fried carrot cake — not the typical white-style carrot cake that one might expect — and is really good at it. Their homemade soft carrot cake (or radish cake) is freshly steamed and expertly fried on orders.

He Zhong’s traditional white carrot cake is fried till crispy on the outside with eggs and minced dried radish (菜脯). Unlike other carrot cakes that are often in small and loose pieces, He Zhong’s fried carrot cake is bounded in one large piece by the eggs when frying and cut into four squarish pieces before serving.

When spicy is requested for the dish, the chilli is fried with the carrot cake instead of being added to the finished dish cold. The spiciness is spread out evenly to enhance the flavour of the carrot cake, not to make it too spicy for the tongue. The carrot cake is fragrant with aroma of dried radish, savoury and delicious when eaten hot.

He Zhong’s carrot cake is a must-try if you have yet to try this style of carrot cake. Expect some waiting time during peak hours.
