Niu Mo Wan Kway Teow Noodle (牛魔丸粿条面) is a small eatery serving beef, pork and seafood with Teochew kway teow (rice noodle) in soup or dry-tossed with satay sauce. Several noodle dishes with beef, beef balls and beef tendon balls are the eatery’s main offerings. It is located along Nanmen Old Night Market (南门古夜市), right opposite the southern-end of Paifang Street (牌坊街).
The Beef Kway Teow Soup (牛肉粿条汤) is served with large amount of fresh sliced beef, lettuce, bean sprouts in flavourful clear broth with kway teow and garnished with scallions and bright-yellow scraped turmeric. Unlike the broad, flat kway teow in Singapore, the Teochew version is slimmer and thicker with firmer texture. Typical of all beef dishes in Chaozhou, the sliced beef are very fresh, tender and juicy — definitely not overcooked as the meat are still reddish when served. The broth is not too strong tasting, allowing the fresh beef to stand out.
Similarly, the dry-style Beef Satay Kway Teow (牛肉沙茶粿) is added with large amount of fresh sliced beef and top with Teochew-style satay sauce. The kway teow is also dry-tossed in satay sauce with bean sprouts and lettuce. A serving of chilli paste accompanies the dish for spicing it up, if desired. The satay sauce is sweet-savoury and non-spicy, giving the dish its smooth flavour without making it too strong-tasting. Fresh beef with satay sauce is a great match.
The Seafood Kway Teow Soup (海鲜粿条汤) looks like an oversized dish. It is served with big prawns, big fresh oysters, clams, pig blood cubes, lettuce and slices of mock meat in a different clear soup — and added with extra serving of pig blood cubes. It is similarly garnished with scallions and scraped turmeric. The seafood are very fresh and the soup is flavoured by the ingredients that are boiled in it. The pig blood cubes are firm and bouncy.
Niu Mo Wan is a hidden gem in the old night market and we are lucky to have stumbled on it. Also, should try fresh blood cubes — be it from pig / cow / chicken / duck / goose — since they are banned in Singapore.
