Ju Xing Hainanese Boneless Chicken Rice (聚兴海南起骨鸡饭) is a food stall in the newly-opened Bukit Batok West Hawker Centre — its main stall is located in Geylang Bahru Market & Food Centre. The chicken rice stall serves high-quality, affordable Hainanese boneless chicken rice (海南起骨鸡饭) and also shredded chicken macaroni (鸡丝通心粉).
Don’t be surprised to see toy chickens hanging in the glass shelf. Hainanese-style steamed chicken meat is usually served slightly chilled or at room temperature to keep the gelatinous layer under the skin solidified and the meat firm, thus, they are stored in chiller before serving and not hang up like roasted chickens or other roasted delights.
The Chicken Rice (鸡饭) is the most basic dish with chicken breast meat, chicken-stock-flavoured rice and light savoury soup. The set meals will have additional ingredients to complete the meal.
The Chicken Rice Set (鸡饭套餐) is served with slightly chilled steamed chicken breast meat, dried beancurd, a braised egg, beansprouts and picked vegetables. The rice has a distinct aroma and the braised egg is nicely-done without a greenish-grey layer (a result of overcooking) surrounding the egg yolk and has a firm texture. The chicken breast meat is lean with no fats, smooth, very tender and retained its juiciness and goes well with the ginger and spicy chilli sauce. The set meal is nice and satisfying.
The Chicken Drumstick Rice Set (鸡腿饭套餐) is served with slight-chilled chicken drumstick with similar ingredients, rice and soup. The deboned drumstick has very smooth skin, with no fats underneath it, and ultra-tender meat. This is the best choice to go for.
Aside from chicken rice and set meals, Ju Xing’s Shredded Chicken Macaroni seems good for breakfast or as a light meal.
